Job description
Position Overview
The Chef de Partie is responsible for preparing specialty meals and substitute dishes, managing oven, broiler, grill, and roaster temperatures, and ensuring proper thawing of frozen items in refrigerators. This role includes monitoring portion sizes, plating presentation, garnishing, and maintaining accurate food logs to oversee food quality and quantity.
Operational Duties
- Prepare and cook food according to recipes, quality, and presentation standards.
- Prepare cold food items as required.
- Communicate with the team during peak hours to coordinate assistance.
- Report surplus food for incorporation into daily specials.
- Inform Food & Beverage service staff about menu specials and out-of-stock items.
- Maintain food quality standards consistently.
Team and Safety Responsibilities
- Assist management with hiring, training, scheduling, evaluating, counseling, disciplining, motivating, and coaching employees.
- Act as a role model for the team.
- Follow all company safety and security policies and report maintenance issues, accidents, injuries, and unsafe conditions.
- Complete mandatory safety training and certifications.
- Ensure a clean, professional uniform and appearance, and protect proprietary company information and assets.
- Respond promptly and professionally to coworkers and guests, fostering positive working relationships and teamwork.
Physical Requirements
- Stand, sit, or walk for prolonged periods.
- Reach overhead and below the knees, including bending, twisting, pulling, and stooping.
- Move, lift, carry, push, pull, and place objects up to 25 pounds without assistance.
Qualifications
- Minimum three years of relevant culinary experience.
- Technical, Trade, or Vocational School Degree preferred.
- No supervisory experience required or expected.
- No licensing or certification mandated.
