About the Venue

ESCA Group is hiring senior section waiters for JŌJI, a newly launched rooftop Japanese restaurant and cocktail bar in Sydney’s CBD. The venue operates late into the night, seven days a week, and is positioned as one of the standout openings of 2024. It combines refined dining, elevated cocktails, subtle design, and a curated music program in a high-energy city location.

JŌJI sits above the corner of George and King Street on top of the Cartier building, overlooking a key crossroad in the Sydney CBD. The venue blends Japanese textures and contemporary lounge styling with live music and DJ programming, creating a late-night dining and drinks experience built around detail, atmosphere, and hospitality.

ESCA Group is an established hospitality group in Sydney, operating well-known venues including Aalia, Nour, ITO, Liliymu, Henrietta Surry Hills, and Henrietta Melbourne. The group is growing, offering room for development and progression across its expanding portfolio.

What the Role Involves

This role suits waitstaff who take pride in delivering polished service, creating memorable guest experiences, and working as part of a collaborative front-of-house team. The position calls for a confident, refined approach to service in a premium bar and dining environment.

• Deliver attentive, high-standard service with confidence, calmness, and a strong eye for detail.
• Understand guest needs early and respond proactively before requests are made.
• Work closely with colleagues to ensure smooth, seamless service across the venue.
• Contribute to the guest experience in a sophisticated setting that values precision and professionalism.

What We’re Looking For

Applicants should have a genuine interest in hospitality and a strong desire to help create exceptional guest experiences. The ideal person will bring a polished manner, excellent communication skills, and the ability to perform well in a premium service environment.

• A strong passion for hospitality and for delivering thoughtful, considered service.
• Excellent verbal communication and the ability to interact warmly and professionally with guests, teammates, and stakeholders.
• Previous experience in refined hospitality; experience in luxury service, fine dining, or upscale cocktail bars is highly regarded.
• A positive mindset and the ability to stay composed when under pressure.
• Professional personal presentation and strong grooming standards.
• Careful attention to detail and a commitment to maintaining exceptional guest experiences.
• A willingness to learn, improve, and perform at a high level.
• Solid knowledge of food and beverage products.
• At least 2 years of experience in a similar position.
