Role Overview
FAENA The Red Sea is looking for a dependable and hands-on Kitchen Technician to support the Engineering function. The role centers on keeping all commercial kitchen machinery operating safely and efficiently so culinary operations run smoothly without interruption. The position works closely with Engineering, Culinary, and Food & Beverage colleagues and requires strict adherence to health, safety, and food safety standards.
Key Responsibilities
- Carry out routine preventive servicing on commercial kitchen equipment to reduce breakdowns and downtime.
- Identify faults and complete repairs on cooking, refrigeration, dishwashing, and food preparation machinery.
- Service and maintain equipment such as ovens, grills, fryers, steamers, combi ovens, refrigerators, ice machines, and warewashing systems.
- Check kitchen exhaust setups, ventilation fans, and grease filtration units to keep them operating properly.
- Investigate and resolve issues related to electrical, mechanical, gas, and refrigeration systems.
- Support the installation, testing, and handover of newly acquired kitchen equipment.
- React quickly to equipment failures to limit disruption in kitchen operations.
- Liaise with outside specialists and manufacturers when repairs require technical expertise beyond in-house capability.
- Oversee the safe functioning of gas systems, protective devices, and related kitchen machinery.
- Follow HACCP, health and safety, fire safety, and company engineering requirements at all times.
- Keep maintenance logs, job records, and equipment service history updated in the CMMS platform.
- Help track spare parts and maintenance consumables as needed.
- Work in coordination with the Executive Chef and Food & Beverage teams for planned maintenance and operational support.
- Maintain a tidy, safe, and well-organized work area.
- Provide support for banquets, special functions, and other operational needs whenever required.
Requirements
- Prior experience in a Kitchen Technician position or a similar engineering role in a hotel, resort, or commercial kitchen setting.
- Solid working knowledge of commercial kitchen machinery, refrigeration, gas systems, and electrical fault-finding.
- Background in preventive maintenance processes and CMMS usage.
- Clear understanding of HACCP principles, food safety practices, and health and safety compliance.
- Strong diagnostic ability and practical problem-solving skills.
- Capability to interpret technical drawings, product manuals, and equipment specifications.
- Good interpersonal communication skills and the ability to collaborate effectively with others.
- Comfort working independently and handling urgent situations under pressure.
- Trade certification in Electrical, Mechanical, Refrigeration, or a related field is an advantage.
- Willingness to work shifts, including weekends and public holidays.
- Strong commitment to high service standards in a luxury hospitality environment.
