Role overview

19grams is a Berlin-based specialty coffee brand founded in 2002. The company operates four cafés, its own roastery, a B2B business, and an online shop, and is driven by a team of people from more than 20 countries. The focus is on building the brand with energy, quality, and a touch of fun.

The business is looking for an experienced, hands-on Head Roaster for its small roastery in central Berlin. This person will take full ownership of everything produced on the Probat roaster, including coffee creation and production, smooth day-to-day roastery operations, and the leadership and development of the roasting team.

Rosting, profiling, and production

You will oversee the complete roasting workflow on the Probat machine, starting with green coffee selection and continuing through roasting, profile development, and final quality checks.

You will design and fine-tune roast profiles that bring out the best qualities and individual character of each coffee.

You will monitor and maintain the roaster and ensure results remain stable and repeatable from batch to batch.

Team leadership

You will guide, train, and grow the roasting team in roasting methods, sensory evaluation, and quality standards.

You will contribute your expertise to coffee selection for the product range.

You will stay connected to the wider coffee community and keep the team informed about current trends and developments.

Quality control

You will carry out regular cuppings and quality reviews so that every coffee meets a high standard.

You will work closely with the tasting team to refine flavour profiles and improve quality continuously.

You will implement quality standards and make sure all relevant food-safety and workplace-safety rules are followed.

Planning and sourcing

You will collaborate closely with purchasing to forecast green coffee needs and place orders.

You will gather customer feedback through the sales team and use it to improve the products over time.

You will support the creation of new coffees and blends to broaden the assortment.

Profile

The ideal candidate has at least 3 years of experience in the specialty coffee industry, preferably as a Production Roaster or Head Roaster.

Strong knowledge of coffee roasting is required, including roast profiles, machine settings, and quality control.

Hands-on experience with drum roasters and their maintenance is important; Probat experience is a strong advantage.

You should have excellent sensory skills for evaluating coffee quality, along with practical knowledge of green coffee selection and sourcing.

Experience in building and improving roast profiles is expected.

The role calls for a team player with strong communication skills who can lead when needed and also work independently.

You should be calm under pressure, able to make quick decisions, and comfortable solving problems in a practical way.

A basic understanding of machine safety and workplace safety is required.

Fluent English is essential, and German would be an advantage.
