About the role
Wicklow Wolf Brewing Company is a growing craft brewery in Ireland, established in 2014 and now recognised as one of the leading names in a fast-expanding beer market. As the business continues to scale, the team is seeking an experienced brewer who places beer quality first and brings a positive, collaborative mindset. The right person will be motivated, inventive, and proactive, with a strong commitment to health and safety. This role offers the chance to work in a small, cross-functional team covering the full brewing journey, from raw material handling through production, quality checks, process improvement, and packaged beer.

Key responsibilities
- Run and maintain a fully automated 35HL, four-vessel Braukon brewhouse.
- Carry out cellar duties including tank CIP, yeast handling, fermentation and tank progression tracking, dry hopping, centrifuge operation, and transfers.
- Complete all required quality control checks throughout production.
- Take a practical, solutions-focused approach to process issues and be open to new methods and improvements.
- Communicate clearly with colleagues across all brewery functions.
- Keep detailed logs and records to a high standard.
- Work flexibly to support the production plan and help ensure product availability for the business.
- Maintain excellent housekeeping and cleanliness standards across beer production and packaging areas.
- Operate and monitor the 16-fill-head canning line, Framax bottling line, and kegging equipment as needed.
- Work honestly and openly with the immediate team and the wider organisation.
- Follow safe working practices and help protect the safety of others.
Requirements and experience
- At least 1 year of brewing experience in a fast-paced production setting.
- A technical brewing qualification such as IBD is beneficial, though not essential.
- A science, engineering, or similar technical qualification is an advantage.
- Prior exposure to automated systems is desirable.
- Experience with process improvement, problem-solving methods, and recipe development is helpful.
- Previous work on canning or bottling lines is advantageous.
- Forklift licence, working-at-height training, and manual handling training are all useful additions.
- Mechanical or electrical engineering experience is a plus.
- Ability to adapt to a busy environment where schedules may change and longer or flexible hours may be needed.
- Comfort dealing professionally with contractors, customers, and visitors.
- Willingness to represent the brewery at events.
- Self-driven attitude with a strong passion for beer and ongoing skill development.

Additional information
This position is based at the company’s site in County Wicklow, Ireland. The brewery operates a modern, fully automated 35HL Braukon brewhouse and cellar with an integrated CIP system, allowing precise control over wort production and beer quality. The cellar includes multiple FV sizes, BBTs, and a GEA centrifuge, supporting a wide range of beer styles. All beer is packaged on site in kegs, cans, and bottles. The company’s approach combines quality equipment, strong ingredients, and skilled people to deliver innovative beers consistently.
Work eligibility
Candidates must be able to commute to Newtown Mount Kennedy, County Wicklow, or be ready to relocate before starting. Eligibility to work in Ireland is required.
