Role overview
The Baker Tournant supports the shipboard bakery’s daily production and control, helping ensure smooth operations in line with company procedures. This position focuses on producing high-quality bread items, maintaining presentation standards, controlling waste, and supporting a safe, clean, and inspection-ready bakery environment.
Key responsibilities
- Oversee the day-to-day running of the bakery shop and help keep production efficient and well controlled.
- Prepare bread items to the required quality and presentation standards for the daily menus.
- Support the Head Baker in forecasting production needs and tracking leftovers to reduce waste and stay within food-cost targets.
- Assist with arranging bread displays across the various buffet outlets.
- Maintain full awareness of United States Public Health rules and follow them consistently.
- Carry out bakery cleaning duties according to the Executive Chef’s schedule, using proper methods to avoid damage to equipment.
- Keep the bakery prepared for both scheduled and unscheduled USPH inspections by ship management or inspectors.
- Handle the request and transfer of required items from main stores to the bakery when directed.
- Follow recipe and yield standards set by the company.
- Help the CDP Baker complete the daily consumption recap as requested by the Executive Chef.
- Develop or maintain the knowledge needed to follow shipboard operating standards and assist guests and crew with questions.
- Take part in meetings, training sessions, courses, and other work-related activities as required.
- Perform any other related duties assigned by supervisors or management.
Qualifications and education
A minimum of 3 years’ experience as a baker in an upscale hotel, resort, cruise ship, or convention banqueting environment is required; shipboard experience is preferred. High school completion or an equivalent basic education qualification is required. The role also calls for knowledge of cleaning methods, equipment use, and proper sanitation practices.

This role may include other job-related duties beyond those specifically listed above, as assigned by management. The bakery is expected to remain compliant with public health standards and inspection requirements at all times.
