Job Summary
The Lead Baker is responsible for preparing a variety of breads, pastries, doughs, and fillings, including tasting, baking, and decorating as required. This role involves reviewing the production schedule to understand daily baked goods requirements, preparing and cooking food according to recipes and quality standards, and maintaining kitchen records for food safety compliance. The Lead Baker will also monitor food quality and portion control throughout the workday, assist management with staff hiring, training, scheduling, and performance evaluation, and ensure adherence to all company policies, including safety and hygiene procedures.
Responsibilities
- Prepare a wide range of breads, pastries, and other baked goods, including doughs and fillings.
- Taste, bake, and decorate items as per specifications.
- Review the daily production schedule to understand and execute required baked goods.
- Prepare and cook food items following established recipes, quality standards, and presentation guidelines.
- Maintain accurate kitchen records to ensure compliance with food safety programs.
- Communicate with the Head Chef regarding excess food inventory for daily specials planning.
- Safely and properly utilize tools, equipment, and appliances for measuring, baking, and food preparation.
- Adhere to and ensure compliance with food handling safety policies and procedures, including personal hygiene standards.
- Monitor and report any issues with kitchen appliance temperatures or food temperatures to management.
- Oversee the quality of prepared food and served portions throughout the shift.
- Assist management in hiring, training, scheduling, evaluating, counseling, disciplining, motivating, and coaching employees.
- Act as a role model for staff and provide departmental mentorship.
- Ensure personal appearance and uniform are neat and professional.
- Maintain confidentiality of proprietary information and protect company assets.
- Communicate clearly and professionally with colleagues and answer phones using proper etiquette.
- Foster and maintain positive working relationships and support team goals.
- Handle sensitive issues with tact, respect, and confidentiality.
- Adhere to quality expectations and standards.
- Perform physical tasks including moving, lifting, carrying, pushing, and pulling objects up to 25 pounds without assistance.
- Work on inclined, uneven, or slippery surfaces.
- Perform stretching, reaching above head and below knees, bending, twisting, turning, and stooping.
- Stand, sit, or walk for extended periods.
- Execute other reasonable job duties as requested by supervisors.
Requirements
- Technical, trade, or vocational school diploma required.
- Minimum of 2 years of relevant work experience.
- No prior supervisory experience is necessary.
- Ability to safely and effectively use baking tools and equipment.
- Strong understanding of food safety and hygiene standards.
- Excellent communication and interpersonal skills.
- Ability to work effectively in a fast-paced environment.
- Physical stamina to stand for long periods and lift up to 25 pounds.
